Duckstravaganza – Wild Duck Fried Rice


My friends finally managed to drag me along for my first hunting trip this weekend.  While the action was a bit slow, we did manage to bag a few ducks on our last day out.  As a result, I’ll be spending the next few days cooking the output of that trip.

Coconut Crusted Cod with Mango Salsa

This is a meal I cooked with Jess and her mom Linda while she was in town this past weekend.  Linda had gotten the original recipe from one of her nieces.  She wasn’t quite sure about the intended breading process so we ended up improvising with a more traditional approach.  I’m happy to report that we were all pretty satisfied with the results.
