Spiced Christmas Goose

Christmas was out our house this year, and I decided to try something new out by roasting a whole goose.  Since I had never done it before, I started with a foundation based on this recipe.  This preparation was pretty labor intensive, but well worth the results.  I even got to use the leftovers to make a pretty fierce pot of goose dumplings, which I’ll be posting a bit later.


  • Sea Salt
  • Whole Black Peppercorn
  • Bay Leaf

Spice Rub

  • Orange Zest
  • Lemon Zest
  • Sea Salt
  • Black Pepper
  • All Spice
  • Chinese Five Spices

Apple Glaze

  • Apple Cider
  • Balsamic Vinegar
  • Honey
