Wild Duck Breast on Mixed Mushrooms

As I mentioned in my previous post, I had a pretty successful hunting trip to close out the last weekend of duck season.  A side effect of that success was that we were eating duck at my house at least once a day for an entire week.  Out of the many dishes that went through my kitche, this one was my favorite:

Wild Duck Breast on Mixed Mushrooms

  • Wild Duck Breast
  • Shiitake Mushrooms, Sliced
  • White Button Mushrooms, Sliced
  • Portabella Mushrooms, Sliced
  • Spinach, Chopped
  • Mushroom Stock
  • Butter
  • Flour
  • Carrot
