A few of our neighbors have particularly green thumbs, and I’ve been really impressed with the productivity over their garden since the beginning of Spring this year. They were gracious enough to share (or offload?) some of their bountiful tomato harvest this week.
Here’s a very simple salad I put together using said tomatoes – I think the colors were pretty amazing. Many thanks to Michael and Jennifer for sharing them with us.
Garden Tomato and Mixed Greens Salad
- Various garden tomatoes
- Baby Spinach
- Baby Kale
- Manchego Cheese, Shaved
- Olive Oil
- Balsamic Vinegar
