Wild Duck Breast on Mixed Mushrooms

As I mentioned in my previous post, I had a pretty successful hunting trip to close out the last weekend of duck season.  A side effect of that success was that we were eating duck at my house at least once a day for an entire week.  Out of the many dishes that went through my kitche, this one was my favorite:

  • Wild Duck Breast
  • Shiitake Mushrooms, Sliced
  • White Button Mushrooms, Sliced
  • Portabella Mushrooms, Sliced
  • Spinach, Chopped
  • Mushroom Stock
  • Butter
  • Flour
  • Carrot

Cherrystone Clam with Grilled Lemon

I spent the last weekend of duck season on the coast with my friends Jonfer and Smitty.  In addition to having exceptionally Texan nicknames, they are also avid outdoorsmen.  On the walk back from one of our hunts they suggested that we take a detour to do some clam digging.  I’m pretty happy we made that choice.  With a half hour investment we filled up a small ice chest with freshly picked clams.  Here’s a pic of us at said ice chest:

  • Fresh picked Cherrystone Clams
  • Grilled Lemon, Sliced Paper Thin
  • Snow Pea Sprouts
  • Angel Sweet Tomatoes
  • Olive Oil
  • Sea Salt

Spiced Christmas Goose

Christmas was out our house this year, and I decided to try something new out by roasting a whole goose.  Since I had never done it before, I started with a foundation based on this recipe.  This preparation was pretty labor intensive, but well worth the results.  I even got to use the leftovers to make a pretty fierce pot of goose dumplings, which I’ll be posting a bit later.

Brine

  • Sea Salt
  • Whole Black Peppercorn
  • Bay Leaf

Spice Rub

  • Orange Zest
  • Lemon Zest
  • Sea Salt
  • Black Pepper
  • All Spice
  • Chinese Five Spices

Apple Glaze

  • Apple Cider
  • Balsamic Vinegar
  • Honey

I spent Thanksgiving weekend at the Frio River with my close friends.  The trip is quickly turning into a real tradition for us, and this time I decided to bring my guitar along for the ride.  I found myself playing this song a lot, and managed to finish things up when I got home.
